There’s nothing better than game day eats! (with a side of half-time and commercials, of course). Since chips & dip are a classic party favorite, I decided to create a decadent cheesy delight with my favorite crispy chip, popchips! For those of you that are living under a rock, and have yet to try — popchips are gluten free, never fried, and always made with real ingredients. (guilt-free for the win!) They’re honestly my go-to bag of chips for texture/taste, SO GOOD! Since I couldn’t make up my mind, I ended up getting the Zesty Jalepeno Cheddar (full of cheesy cheddar and pack a peppery punch with the heat of a jalepeno, nom!), Buffalo Ranch Ridges (like eating the flavor of buffalo wings without the mess, yasss!), Cheddar and Sour Cream (classic) and Sea Salt (another divine classic) for the homemade dip I’m sharing below.

Game day eats are all about the finger food/apps (in my opinion) easy to prepare, grab & bite without the hassle of dishes. Plus, they’re just so fun. In honor of my love for cheese, I decided to create a delicious whipped feta with cucumber — prepared with the Sea Salt popchips that are oh-so-good. Not only does this recipe take less than 10 minutes to prepare, it’s a unique twist on Mediterranean flavors that give the ultimate combo of soft/crunchy. It’s a touch-down for a light bite and pop to your step! Furthermore, it looks pretty on your game day spread. (I opted for blush serving dishes, of course) You know I’m doing game day chic! Whipped Feta with Cucumbers Recipe

INGREDIENTS

  1. 1 pound of feta cheese
  2. 1/4 pound of cream cheese (softened)
  3. 1 tablespoon of heavy cream
  4. 1/4 cup of olive oil
  5. 1 tablespoon of lemon juice
  6. 2 cucumbers chopped in small squares
  7. Oregano (for cucumbers)
  8. salt and pepper
  9. Sea Salt popchips

DIRECTIONS:

  1. Puree the feta, cream cheese, cream, olive oil, and lemon juice.
  2. Blend until it’s really fluffy
  3. In another bowl, toss the cucumbers with oregano, salt/pepper, 1 tablespoon of olive oil and a hint of lemon juice.
  4. Serve the whipped feta slightly chilled on Sea Salt popchips crackers and add cucumbers on top!
  5. Enjoy!
